OKRA SOUP

Okra Soup is one of the soup prepared in Nigeria and can be taken with Amala, Semolina, Eba or Pounded yam, enjoy!

Ingredients
*       Okra
*       Red Palm Oil
*       Iced Fish
*       Ground Crayfish
*       Salt
*       Pumpkin leaves
*       1 cube of Maggi

Preparation
1.     Cut the okra into tiny pieces, grind the crayfish, wash and cut the pumpkin leaves into tiny pieces. Wash, cut and boil the iced fish. Leave to cool and remove the bones inside the fish.

2.      Pour red palm oil in a clean dry pot and heat to dissolve the oil. Add the diced okra and start frying on medium heat, add some fish stock (or water) from time to time till you notice the okra start to draw. This process should take a maximum of 5 minutes to avoid over-cooking the okra.

3.      Now add the ground crayfish, pumpkin leaves, a pinch of salt, a cube of Maggi, the fish and stir well.

4.      Cover the cooking pot and leave to simmer for 5 minutes.

5.      The soup is ready!
