Edikaikong is a popular Nigerian Efik Vegetable soup. This soup is made from dark green leafy vegetables and very nutritious. Enjoy!
Ingredients
* 8 medium pieces of beef
* 6 medium pieces of cow skin
* 1 medium size of smoked fish
* 1 small size of stockfish head
* 4 medium bunches of Ikong Ubong (pumpkin leaves)
* 2 medium heaps of water leaves
* 1 small bulb of onion
* 3 medium size of fresh or dry pepper
* 3 cooking spoons of palm oil
* 3 tablespoons of crayfish (ground)
* 4 cubes of Maggi
* Salt to taste
Preparation
1. Wash and season the beef with salt, Maggi, few slices of onion and steam with the washed stockfish head till juice dries up.
2. Add 2 cups of water, cow skin and cook till soft. Add the crayfish, washed smoked fish, pepper and palm oil to the pot containing the meat, stockfish and cow skin.
3. Stir and allow to boil for about 10 minutes. Add the remaining Maggi and the shredded water leaves.
4. Stir and cover the pot, cook for about 2 minutes. Add the shredded ikong ubong leaves and cover the pot. Simmer for about 8 minutes and stir.

5. Add salt to taste. Simmer for another few minutes and stir.
6. Remove from heat and serve with fufu, eba or pounded yam.
