EFO ELEGUSI

Efo Elegusi is a unique soup in Nigeria, especially among the Yorubas. Enjoy!

Ingredients
*       10 medium pieces of beef
*       1 medium head of stockfish 
         head
*       1 medium size of smoked fish
*       1 medium bunch of shoko 
         leaves
*       4 large size of fresh ground 
         pepper
*       4 large size of fresh ground tomatoes
*       4 large size of ground tatashe
*       1 large size bulb of ground onion
*       1½ cups of ground Egusi
*       1 small wrap of locust beans (iru)
*       4 cubes of seasoning magi
*       1½ litres of water
*       Salt to taste

Preparation

1.      Wash and season the beef and stock fish head with onion, seasoning magi, salt and pepper then steam till juice dries up.


2.      Add 2 cups of water and continue cooking for 20 minutes. Pick, wash, cut the shoko leaves and blanch slightly then set aside. Wash and remove the bones in the fish.

3.      Heat the palm oil, then add ground fresh tomatoes, onion, pepper and tatashe. Fry for about 5-10minues. Add the stockfish, smoked fish, l, beef and stock.

4.      Allow to cook for about 5 minutes. Add ground Egusi then cover the pot and do not stir for 7 minutes. Add water and continue boiling for 8-10 minutes. Add the remaining magi cubes and stir. Simmer for about 2 minutes and add salt to taste. Then add shoko leaves and allow to simmer for another few minutes.

5.      Remove from heat and serve with pounded yam or eba or cassava fufu.
